...with the exception of TNG. The only memorable thing I can recall Crusher ever doing was being pushed into the holographic ocean in Generations. And quite honestly, I still can't forgive her for Wesley.
McCoy was great as a down-to-Earth, simple country doctor (as he put it at least once); except in deep space, and surrounded by an over-mechanized, complicated future. His indulgence in alcohol also proved amusing more than once.
Bashir's character evolved considerably over the course of DS9, and was interesting to watch. Especially through his experiences during the Dominion War and Section 31.
The EMH just had personality; and more-often-than-not, was the funniest thing about any given episode. The episodes focusing on his character were also some of VOY's best.
Phlox's devotion to his ethical code is also pretty impressive whenever it comes up in an episode. His menagerie of creatures is also pretty interesting, if somewhat unconventional and seemingly archaic treatment.
